Here is a cake recipe that I make all the time. Nothing could be easier it freezes great I usually make it in two 9″ cake pans and put one in the freezer. You can make it ahead. In fact it gets better if it sits. You can put whip cream on the top if you like but we just eat it “as is”. I always take this to parties and I can hear people whispering, “they forgot to frost that cake.” They are the ones that always ask for the recipe.

Aunt Arduth’s lemon Poke Cake

1 Box Yellow cake mix
small lemon Jell-O
4 eggs
3/4 C. oil
3/4 C. water
Mix altogether put into
greased baking dish
Bake @ 350* for about 30 minutes

when cool poke holes all over with a fork
Then drizzle this on the top
1/2 C. lemon juice
2C. Confectioners Sugar
